Chef Recommended Charcuterie

As we all begin to come out of hibernation and venture out into our backyards to rejoin small groups of friends, it is the ideal time to put together a Charcuterie board or a sampling of your favorite cheeses, meats and crackers. But, how do you put together the perfect spread?

What is a Charcuterie Board?

To get started, perhaps we should look at what a Chacuterie Board is. Food and Wine magazine said, “…more than a bunch of meat on a plate, charcuterie is a culinary choose-your-own-adventure story. Imagine the savory goodness that is a charcuterie board: an array of cured meats, tangy pickles, sweet jams, cheese, fresh fruit, and your own personal culinary wild cards, paired with beer or wine to complement the flavors and textures.” To put it simply, it is a collection of cheese, cured meats, crackers, bread and a few fruits. For my part, I like to add some nice dark chocolates to the mix.

How do I put it together?

Let’s look at this a little closer…

  • Select your favorite “board” to build on. This can be a large cutting board, a large tray (remember those trays you have tucked in a closet?), a plate or even a bit of butcher paper on your table.
  • Add your bowls and large cheese wedges. This is where you put bowls to contain your pickles, spreads, olives and cheeses you want people to cut for themselves. If you are using a tray or your table, you may want to put a small cutting board under the cheese to protect the surface.These items take up space so you want to place them first rather thna trying to “squeeze them in.”
  • Now add in the bread or crackers. These take up a lot of room so putting them down now lets you build around them.
  • Lay in your cured meats and pre-sliced cheeses. By outting in pre-sliced cheeses your add some different colors and keep people from taking large slices of your block cheeses. It also keeps things moving faster. For the cured meats, put in several types at different locations of the board to give it a more colorful appearance.
  • Time for fruits and chocolate. Fill in the gaps with the fruit and chocolate. Everyone loves fruit and chocolate so tuck them around to fill in the gaps. I especially love bright red and green grapes.

Some other ideas…

Make some special bread to add to your presentation. But remember, to keep it simple. You want to enjoy the gathering not work as the caterer for people gathering in your backyard. You don’t have to use exotic or expensive cheeses, you can use simple good quality cheese and meats.

If you are feeling adventurous, try making a Fougasse and building around it. And while I would love to make this in my own brick, wood fired oven, I have yet to convince Dive Mom to let me have one at home or at the office. So, you can make it in your oven on a pizza stone.

Dive Guide Candidates at BBL

This weekend saw our newest Dive Guide candidates, Wylie and Jessica, brave the cooler waters of Beautiful Blue Lagoon to help Eric and Madison enjoy themselves on their first dives since open water training! At least that was the story we were working under. They were in charge of briefings, tours and logging for the day and making sure theri new divers had a really fun time. Three dives into 61oF water along with some surface antics made for a full-day of training and evaluations.

But through it all, Wylie and Jessica kept cool heads and a positive attitude while working with their “bubba” divers. They did a really awesome job and it will be a real treat to have them join our staff.

Sea of Cortez Liveaboard

August 7 -August 14, 2021

Overview

The Sea of Cortez is an interesting place. We started diving here many years ago when giant mantas were common and multiple schools of hammerhead sharks would swirl around El Bajo. Commercial fishermen hit the place really hard in the 1990’s before the government of Mexico enacted exclusionary zones and marine protected area. Our beautiful sea has come back to life but it is different than before. Whale sharks are still resident seasonally off La Paz. The sea lions at Los Islotes were never impacted. Humpback whales still show up every winter. And the huge schools of panamic fish are as abundant as ever before. We are seeing hammerhead sharks at El Bajo and Los Animas and mantas at La Reyna. We finally figured out where the humboldt squid are and it’s quite a trek to get there! We discovered the stunning number of whale sharks at Bahia de Los Angeles in the northern sea of Cortez.

Cousteau called the Sea of Cortez the aquarium of the world. Expect to see a lot of fish. A LOT of fish! Whale sharks in season. California sea lions. Giant manta rays at one particular site. A variety of shark species possibly including hammerheads (noting that the Sea of Cortez is nowhere near as sharkie as Socorro), several shipwrecks, garden eels and diving cormorant birds.

Fly into Cabo on a Saturday and meet at, See Creatures, Dive Center and board a luxury coach transfer to La Paz at 7pm to board the boat. The boat will depart early Sunday morning to start diving and visit our old favourites including Los Islotes, El Bajo, Fang Ming, Suwammee Reef and wreck of the Salvatierra, La Reyna and the sharks of Las Animas. You will return to La Paz the following Saturday to disembark at 8:30am. There is an easy transfer to SJD in time for an afternoon flight home OR head into Cabo for more adventures!!

Can I use a rebreather?

The Nautilus Explorer is a rebreather friendly vessel. They have sorb and oxygen on-hand (ok, we need to tell them when you book so we can make sure it is on-board). So, yes you may use your rebreather.

COVID Information

The traveler must be free from COVID before departure. A Covid test is required before departure (with in 5 days prior) and a test is required to return to the United States. These requirements are subject to change

All moneys are due in full on deposit even if not paid in full and some penalties may ably for cancellations based on the operators policies and group penalties.  As with most small island properties and vessels, cancellations are more of an issue so they have limited ability to fill unused spaces.  We highly recommend trip insurance to help avoid any unnecessary problems.  No refunds for missed flights or changes in plans. Trip insurance and diving insurance can be found at http://oceanicventures.net/travel-insurance/.  Both Dive Assure/DAN and Travel Guard have a family plan.  Diving Accident and Medical Insurance is required. Vessel and OVI travel releases are required.  Please plan to bring a copy of your logbook, c-card, and diving insurance.

Note: All guests spaces are reserved upon deposit.  But unless a minimum number of guest sign up for the trip by the deadline dates, an Oceanic Ventures trip leader will not be attending.

  • * As with most small liveaboard operations, cancellations are more of an issue so they have limited ability to fill unused spaces. We always recommend trip insurance to help avoid any unnecessary problems. There are no refunds for missed flights or changes in plans. Travel Insurance (ie: comprehensive accident, medical, baggage and trip cancellation and interruption insurance) purchased at the time their reservation is made, may help protect guests from financial disappointment if they are prevented from making their scheduled trip due to illness or family illness, or in the event that unforeseen circumstances prevent the airline or yacht from making its scheduled trip.
  • * The United States is requiring a COVID test prior to re-entering the country. The boat will handle getting everyone COVID tested prior to boarding your return flight.

St Patrick’s Day 2021

The last twelve months have been a little unusual to say the least. Many people cleaned out their spare rooms, garage and attic while working from home while others reinvented themselves. We endured a polar “Ice-apocalypse” and now have the opportunity to replant our yards and paint the walls and ceilings of our homes. Yes, it has been an interesting twelve plus months! The warmer weather is here and the lakes will start their long warming trend so those who have avoided the drysuit course can finally get back into the water.

Eric's Grandfather and Grandmother in the PhilippinesWe will probably wait until next year to head out to the annual St Patrick’s day celebration at the Mucky Duck but that doesn’t mean we wont be celebrating our Irish heritage here are Oceanic Ventures. Like in previous years, Eric will be continuing his Sean Ahair’s (Grandfather in Irish) practice of sharing Irish Whisky with his friends throughout the day! So, come by for a wee bit of the Uische Beatha either in a glass or disguised in an Irish Coffee (Ann’s favorite way to experience it).

The History of St. Patrick’s Day

According to Wikipedia, The story of St. Patrick’s Day begins with the legend of the man himself—an actual person who lived more than 1,000 years ago. In the fifth century, a British man named Patrick had a vision of himself visiting Ireland and bringing Christianity to the people there.

The story goes that he traveled throughout Ireland, using a shamrock (or a three-leaf clover) to explain the Holy Trinity: Each of the clover’s leaves represented the Father, Son, and Holy Spirit. (This is why shamrocks are the national flower of Ireland, and why they’re used in St. Patrick’s Day celebrations to this day.)

When St. Patrick died on March 17, 461, his death date became a national religious holiday in Ireland. Families would go to church in the morning and then celebrate for the rest of the day. The holiday typically falls during Lent, but the restrictions would be lifted for the day, so the Irish people celebrated by eating corned beef and drinking beer—a tradition that’s now used to celebrate St. Patrick’s Day all over the world.

More than 1,000 years later, the tradition of St. Patrick’s Day parades began, although interestingly, they began in America and not in Ireland. Irish soldiers serving in the army held a march on St. Patrick’s Day in New York City in 1772, and since then most major cities in America have adopted the tradition of hosting a St. Patrick’s Day parade. The largest celebrations outside Ireland are the parades held in New York City and Boston.

But David and Jamie Morris and Ashton Arsement will argue that if you take into account the population, the largest St Patrick’s day celebration is in St Croix, USVI! The Island has almost 100% participation (over 100% when you count the visitors) in the parade and other festivities.

Chef Eric Recommends – Chocolate Guinness Cake

According to Nigella Lawson This cake is magnificent in its damp blackness. I can’t say that you can absolutely taste the stout in it, but there is certainly a resonant, ferrous tang which I happen to love. The best way of describing it is to say that it’s like gingerbread without the spices.

There is enough sugar – a certain understatement here – to counter any potential bitterness of the Guinness, and although I’ve eaten versions of this made up like a chocolate sandwich cake, stuffed and slathered in a rich chocolate icing, I think that can take away from its dark majesty. Besides, I wanted to make a cream cheese frosting to echo the pale head that sits on top of a glass of stout. It’s unconventional to add cream but it makes it frothier and lighter which I regard as aesthetically and gastronomically desirable. But it is perfectly acceptable to leave the cake un-iced: in fact, it tastes gorgeous plain.

Ingredients – For the Cake

  • 250 millilitres guinness
  • 250 grams unsalted butter
  • 75 grams cocoa powder
  • 400 grams caster sugar
  • 150 millilitres sour cream
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 275 grams plain flour
  • 2½ teaspoons bicarbonate of soda

Ingredients – For the Topping

  • 300 grams cream cheese
  • 150 grams icing sugar
  • 2 teaspoons cornflour
  • 125 millilitres double cream (or whipping cream)

Method

  • Preheat the oven to gas mark 4/180°C/160°C Fan/350ºF, and butter and line a 23cm / 9 inch springform tin.
  • Pour the Guinness into a large wide saucepan, add the butter – in spoons or slices – and heat until the butter’s melted, at which time you should whisk in the cocoa and sugar. Beat the sour cream with the eggs and vanilla and then pour into the brown, buttery, beery pan and finally whisk in the flour and bicarb.
  • Pour the cake batter into the greased and lined tin and bake for 45 minutes to an hour. Leave to cool completely in the tin on a cooling rack, as it is quite a damp cake.
  • When the cake’s cold, sit it on a flat platter or cake stand and get on with the icing. Lightly whip the cream cheese until smooth, sieve over the icing sugar and cornflour and then beat to combine.
  • If using double cream, add it and beat until you have a spreadable consistency. If using whipping cream, whisk first to soft peaks, add a couple of spoonfuls into the cream cheese mixture and once this is combined, fold in the rest.
  • Ice the top of the black cake so that it resembles the frothy top of the famous pint.
