A Christmas Favorite – Aunt Peggy's Rum Balls


The holidays are here and my entire family has begun talking about Aunt Peggy’s Rum Balls.  She used to make the every holiday season and we had to hide them from Jason or no one else would get any.  She is not around any longer but she left us with a lot of love and her recipes.  So, if you feel like adding a little of our holiday traditions to yours, here is the recipe.
Ingredients:

  • 4 Cups          rolled vanilla wafers (finely ground – she used a rolling pin to roll over them)
  • 1 1/2 cups    Finely chopped nuts
  • 1 1/2 tbs        cocoa
  • 2 tbs              white Karo corn syrup
  • 1/2 Cup         Rum (you can add less for a weaker rum ball)
  • 1 Cup            powdered sugar (for coating the balls)

Preparation:

  • Mix all ingredients thoroughly
  • form into small balls.
  • Roll in powdered sugar and wrap in waxed paper
  • You freeze these for up to 3 months (they won’t last that long in our house)

Variation:
My nephew, Austin O’Hara,  who is the Executive Chef for a college in North Dakota, sent me a note about these.   “I add the 1/2 Cup of rum and 1/4 cup of Disaronno (Amaretto) but I like mine strong.  Also, if you can find “snow” dextrose sugar instead of powdered sugar, it won’t dissolve over time.”
After Peggy was gone, Jason’s neighbor, John (an 85 year old retired chef) took up the mantle and started making them and giving them to Jason and the family as a gift.  Of course he had to prepare two batched or we would only get about six of them.  John is now in his 90’s and is not baking as much as he used to so I am going to have to make my own Rum Balls this year.
Having these Rum balls always means the holidays are here and they bring back a lot of fond memories.  Try them and let me know what you think!

Eric's Receipe Challenge – Gougères

Ok, the month has flown by and I have not had time to make the Cannels from the last challenge.  Maybe before the open house I’ll have time for them.  Anyway, I found a new challenge for this week – Gougères or French cheese puffs.  These taste amazing and you can make them ahead of time and bake just what you need straight out of the freezer.  You should try them; they are delicious!  Here is the recipe.  Be sure to leave a comment and let me know how you like them.

A Mediteranian Treat Recommended by Chef Eric

This past week I found some eggplants in the outside refrigerator that were about to go bad so I needed to find something to do with them.  Then I remembered Madison’s favorite party contribution so I decided this was the perfect answer — Baba Ganosh.  Madison’s go-to recipe for his version is in “My Paris Kitchen” by David Lebovitz.  Fortunately, I have that cookbook as well so I was off to the races!  This recipe lets you use one of my specialty kitchen gadgets — a culinary torch!  It is far cleaner than using the flame on the stove and certainly much more fun.  you can find this recipe on David’s website.  You can also change the basic recipe by adding some other flavors like roasted peppers, cumin, black pepper or any other combination of spices you feel like using.  My only caution is to use small amounts. you can always add more after you taste it.  Thanks, Madison for the inspiration!  My recommendation is to have it with some fresh pita bread, maybe a little wine and think about your next dive trip.

What I am Cooking?

Zaide and I have been talking a lot about the Great British Baking Show.  I have been binge watching it on Netflix and love the ideas generated from the different challenges.  So, this week I am planning on making some traditional cream horns.  However, since I don’t want to eat them all by myself, I am going to have to bring them into the office and get some help eating them.  So, come by and see what treats are in store for you on Friday.

What caught my attention?

  • Travel: With a trip to Reveille Peak Ranch looming in the future, I noticed a new way to go camping in a luxury pod.  Here is a way you might like to go camping.
  • Cooking & Baking: The weekend is time for grilling.  I found some good tips from Bobby Flay in the article Bobby Flay’s Top Five Grilling Tips for Better Barbecues.  I also found some inspiration for weeknight grilling in – 15 Easy Weeknight Grilling Recipes

Special Smells for the Holidays

Diving is a social activity and for many of our divers, the holidays are full of social events.If you are like me, you love to cook but sometimes the smells contradict one another in your house.  This is especially true around the holidays.  To get that fresh holiday smell back into your home you can simmer some spices on the stove to make your home smell sweet for your guests.  In an article that appeared on Food 52‘s blog, Amanda Sims posted a few ideas to help you create an inviting home for the holidays.  She writes, “It’s hard to think about potpourri without sneezing; the very idea of dried husks and petals in a decorative bowl screams dust and must. Which is why many take to the stovetop method, especially during the holiday seasons…”  You can read more here.
